How the Michelin Guide awards its stars
In terms of how it works, the most influential good food guide of them all is still shrouded in a certain aura of mystery. However, according to the current editor, these prestigious stars are awarded on the basis of a number of specific criteria: "Over and above the subjective judgements made by our inspectors, we always pay particular attention to five criteria: produce quality, expertise in the different cooking methods, flavours, the personality in charge in the kitchen, and above all consistency. We also take the setting and ambience into consideration".
