    Several départements have set up associations of restaurant owners who are determined to rebel against the trend towards mass-produced convenience food by exploiting the authenticity and flavours of the produce of their own terroir, and to promote their talents and their sense of hospitality.

      For example, La Ronde des Mousquetaires and Les Tables du Gers have sprung to the defence of Gascony’s fine food, wielding their knives and forks! 
      Les Bonnes tables du Lot, founded by celebrity Michelin-starred chef Alexis Pélissou, has proved a rallying point for charismatic chefs who are champions of gourmet dining.

      In the Pyrenees, Le Club des Saveurs is another organisation eager to point you towards the best places to dine in Ariège, serving modern, gastronomic food that is the product of the local terroir. 
      In Tarn, AGItarn is an association of independent-minded, go-ahead chefs who are keen to share their enthusiasm.

      Lastly, Les Restaurateurs du Tarn et Garonne have made a name for themselves, demonstrating that this département too is now one of the Southwest’s leading gourmet destinations.

      The title of ‘Maître-Restaurateur’: helping consumers identify excellence

      • Cuisine prepared on the premises, high-quality, fresh produce, a team of professionals, regular inspections : these are the ingredients that go into obtaining the coveted title of Maître-Restaurateur. In Occitania / Pyrenees-Mediterranean some sixty restaurateurs have been awarded the title by the Prefect of the département, for a duration of 4 years which is renewable.
        These eateries guarantee not only excellence and authenticity but also a superior service and welcome, plus careful observance of health and safety regulations.
