In winter you can take to the Pyrenees for skiing and snowsports. The region boasts 23 ski areas including Tourmalet-La Mongie, Luchon-Superbagnères, Ax 3 Domaines, Font-Romeu.
In the north of Occitania / Pyrenees-Mediterranean, Aveyron and Lozère are another destinations for cross-country skiing and snowshoeing, which you can do in the Aubrac region.
